These delicious and festive looking Cranberry & Walnut Goat Cheese Truffles are a perfect appetizer for any special occasion. They are quick and easy to make, and you can even prepare them ahead of time, making your hosting preparations less stressful. They also make a gorgeous addition to your cheese or charcuterie board or as a topping on your salad.
Ingredients you will need for this recipe:
- goat cream cheese
- honey
- finely chopped walnuts
- finely chopped dried cranberries
- finely chopped fresh parsley
How to make Goat Cheese Truffles:
(1) Goat Cream Cheese
In a mixing bowl, whisk together 300 g goat cream cheese, 1 tablespoon honey and 30 g of finely chopped walnuts until everything is well combined and creamy in texture.
(2) Making Cranberry & Walnut Goat Cheese Truffles
In a medium size bowl, toss together the remaining 70 g finely chopped walnuts, 70 g finely chopped dried cranberries and finely chopped parsley.
Using an ice-cream scoop, portion out one scoop of goat cream cheese and toss it in the cranberry/walnut/parsley mixture, until completely covered. When covered, you can use your hands to even out the shape. Continue this process with the remaining goat cream cheese.
(3) Refrigerate and Serve
Refrigerate the Goat Cheese Truffles until ready to serve.
You can store the Goat Cheese Truffles in the refrigerator in an airtight container for 3 to 4 days.
