Chestnut & Walnut Bread

This crispy, aromatic and fluffy chestnut and walnut bread is perfect for the season of autumn. The bread is easy to prepare and is also very healthy because of the chestnuts and walnuts, which are rich in vitamins and minerals.

Ingredients you will need for this recipe:
  • cooked chestnuts | 200 g
  • walnuts | 150g
  • water lukewarm | 350ml
  • dry yeast | 7g
  • liquid honey | 1 tablespoon
  • wholemeal spelled flour | 200 g
  • spelled flour | 200 g
  • all purpose flour | 150 g
  • salt | 2 teaspoons

How to make Chestnut & Walnut Bread:

(1) Prepare the ingredients

Chop 200 g chestnuts and 150 g walnuts into small pieces.

Stir 7 g of dry yeast and 1 tablespoon of liquid honey into 350 ml of lukewarm water. Leave to stand for approx. 5 minutes until foam forms on the surface.

(2) For the dough

Dry ingredients: Put 200 g wholemeal spelled flour, 200 g spelled flour, 150 g all purpose flour, 2 teaspoons salt and the chopped chestnuts and walnuts in a large bowl. Mix the ingredients together and form a well in the middle.

Pour the risen yeast mixture into the well and knead all the ingredients into a dough. Tip: If the dough is too wet or too dry, add a little more flour or water.

Cover the bowl with the dough with a clean tea towel and let it rest in a warm place for about 60 minutes.

(3) Baking the bread

Knead the dough on a floured work surface and shape into a loaf.

Place the bread on a baking tray lined with baking paper, cover with a clean tea towel and leave to rest in a warm place for another 30 minutes.

Preheat the oven to 200 °C, top/bottom heat.

Bake the bread on the middle shelf of the oven for about 25 – 35 minutes, until the bread crust is nice and crispy. Let the bread cool completely on a wire rack.

Some Recipe Tips:

Freezing: The bread can also be stored in the freezer. Let it cool down completely and pack it airtight in a freezer bag. This way it can last up to 2 months.

For serving: Let it thaw completely at room temperature. Optional: Before serving, you can toast the bread to make it warm and crispy.
