Eton Mess | Classic British Dessert with Whipped Cream, Strawberry & Meringue

Eton Mess is a classic British dessert with just a few ingredients. A mixture of crumbled meringue, whipped cream and strawberries. The dessert is quick and easy to make while still looking impressive and being incredibly delicious. It is therefore ideal as a last-minute recipe when things have to be done quickly. This dessert got named after Eton College, which was attended by many members of the Royal Family, including the young Princes William and Harry.
Ingredients you will need for this recipe:
- 300 g strawberries | frozen
- 300 ml heavy cream
- 50 g powdered sugar | icing sugar
- 1 packet bourbon-vanilla sugar | 7 g
- 100 g meringues
How to make Eton Mess:
(1) For the Strawberry Sauce
In a small saucepan, warm the 300 g frozen strawberries over medium-high heat, until soft, then mash with a potato masher. If you prefer the sauce fine, you can also finely purée the strawberries with the hand blender. Let it cool down.
(2) For the Whipped Cream
Add, 300 ml heavy cream, 50 g powdered sugar and 1 packet bourbon-vanilla sugar | 7 g, in a mixing bowl. Using a stand mixer or a whisk, whip the cream mixture, until stiff.
(3) Arrange the Eton Mess Dessert in Glasses
Finally, arrange the Eton Mess dessert in glasses. Crumble the meringue in your hands and put about 1-2 tablespoons in a glass, then add 1-2 tablespoons of the whipped cream mixture on top, then 1-2 tablespoons of the strawberry sauce. In that order, continue layering the Eton Mess until the jar is full. Finally, garnish with some crumbled meringue.
Tip: You can also arrange the Eton Mess in a serving bowl. This way the recipe is even faster, but tastes just as good!

Strawberry Sauce: The strawberry sauce can of course also be made with fresh strawberries. However, I would not heat the strawberries for this, but rather crush 2/3 of the strawberries and cut the remaining third into small pieces and mix them together.
Berries: Of course, other berries such as raspberries, blackberries, or a mix can also be used for the Eton Mess dessert.
