- 1 heaped teaspoon cinnamon
- 200 ml cream
- 1 tablespoon bourbon vanilla sugar
- a pinch of salt

How to make Cinnamon Parfait with Candied Almonds:
(1) For the Cinnamon Parfait
In a clean, dry bowl, beat 2 egg whites with a pinch of salt until stiff peaks form. In another bowl, whip 200 ml of cream and 1 tablespoon of bourbon vanilla sugar, until stiff. In separate bowl, cream 2 egg yolks with 80 g of sugar and 1 heaped teaspoon of cinnamon.
Gently fold the whipped cream into the egg yolk mixture, then incorporate the beaten egg whites. Carefully fold in coarsely chopped candied almonds.
