Caramelized Mixed Onion Quiche

This delicious Mixed Onion Quiche has a buttery and flaky puff pastry crust packed with a variety of caramelized onions. It is the perfect dish to serve at brunch or any occasion, where you want to whip up something quick and easy, while still serving something delicious.

Ingredients you will need for this recipe:
  • 1 puff pastry | quiche dough
  • 3 white onions
  • 1 red onion
  • 4 spring onions
  • 1 leek
  • 50 g butter
  • 1 tablespoon olive oil
  • 3 eggs
  • 150 g crème fraîche
  • nutmeg
  • salt & pepper

How to make Caramelized Mixed Onion Quiche:

(1) Prepare your Ingredients

Prepare the onions. Chop the spring onions and the leek into slices. Roughly chop the white onion and thinly slice the red onion into rings.

In a mixing bowl, add the 3 eggs, 150 g crème fraîche, a generous pinch of ground nutmeg, salt and pepper. Whisk everything together, until it is well combined. 

In a tarte/quiche pan of 24 cm in diameter | 9 inches, evenly spread the store-bought puff pastry, and create an about 2 cm high crust at the edges.

(2) Caramelize the Onions

In a frying pan, heat up 50 g butter and 1 tablespoon olive oil on medium to high heat. Add the chopped white onion and sauté, until the onions become translucent. Then, add the sliced leek and mix, until everything is combined, and the leek starts to soften. Finally, add the chopped spring onion and mix, let it sauté, until everything nicely cooked and caramelized. 

(3) Bake the Quiche 

Preheat the oven to 180 °C. 

Add the caramelized onions into the egg-mixture and mix, until everything is well combined.

Pour the mixture into the tarte/quiche pan laid out with puff pastry. Garnish the Onion Quiche evenly with the red onion rings.

Bake in the oven for 40 min.
