Ingredients:
- 3 eggplants
- 3-4 zucchinis
- 4 bell peppers (red and yellow)
- 4-5 onions
- 1 whole garlic bulb (about 10 cloves)
- 2 handfuls of cherry tomatoes
- 1 handful of fresh thyme or 2 teaspoons dried thyme
- 1 handful of fresh oregano or 2 teaspoons dried oregano
- 150 ml olive oil
- salt and pepper
Directions:
(1) Preheat the oven:
Preheat your oven to 200°C (390°F) using the top and bottom heat setting.
(2) Prep the ingredients:
Peel the onions and garlic. Cut the onions into large chunks and roughly chop the garlic.
Chop the eggplants, zucchinis, and bell peppers into large pieces. Wash the cherry tomatoes and the fresh thyme and oregano. Roughly chop the herbs.
(3) Assemble in a baking dish:
Place the chopped vegetables, onions, garlic, and cherry tomatoes into a large baking dish.
Sprinkle the fresh thyme and oregano over the vegetables, or evenly distribute the dried herbs if using those. Drizzle everything with olive oil and toss well to coat. Season generously with salt and pepper.
(4) Roast in the oven:
Roast the vegetables in the preheated oven for 90 to 120 minutes, until they’re soft and slightly caramelized. Stir occasionally during roasting to ensure even cooking. Let the dish cool slightly before serving warm.
