German Cinnamon Star Cookies | Zimtsterne

These delicious Cinnamon Stars are soft, delicate cookies with a perfect balance of sweetness and spice. They bring together the ideal blend of ground almonds, crispy, sweet powdered sugar, and the warming aroma of cinnamon. The almonds give the Cinnamon Stars a fine texture and a delicate, nutty flavor. A true classic among German Christmas Cookies.

Ingredients you will need for this recipe:
  • 300 g ground almonds
  • 250 g powdered sugar
  • 1 packet of bourbon-vanilla sugar
  • 2 drops of bitter almond aroma
  • 1 teaspoon of cinnamon powder
  • 3 egg whites
How to make German Cinnamon Stars Cookies:

(1) Prepare Cinnamon Star Dough

In a large bowl, combine 300 g ground almonds, 150 g powdered sugar, 1 packet of bourbon vanilla sugar, 2-3 drops of bitter almond aroma, 1 teaspoon of cinnamon powder, and 2 egg whites until a smooth dough forms.

Wrap the dough in plastic wrap and refrigerate for about 1 hour.

(2) Make Egg White-Powdered Sugar-Mixture

While waiting, prepare the egg white mixture. Beat 1 egg white until stiff, gradually adding 100 g powdered sugar through a sieve. Stir until the mixture is smooth.

Transfer the mixture to a small bowl, cover, and refrigerate until ready to use.

(3) Cut out Cinnamon Stars

Roll out the dough on a lightly powdered sugar-dusted surface to a thickness of approximately 1/2 – 1 cm. Use a star-shaped cookie cutter to cut out stars and place them on a baking sheet lined with parchment paper.

(4) Brush the Stars with Egg White Mixture

Using a knife or the back of a small spoon, brush the stars with the egg white-powdered sugar-mixture.

(5) Bake Cinnamon Stars

Preheat the oven to 140°C (285°F) with both upper and lower heat or 120°C (250°F) for convection.

Depending on the thickness of the rolled-out dough, bake the cinnamon stars for 15 – 20 minutes.

The goal is for the cinnamon stars to “dry out” in the oven. The icing should not brown, and the stars should feel soft on the underside when taken out of the oven.
