Alsace Tarte Flambée | Flammkuchen

Traditional Tarte Flambée, also known as Flammkuchen, is a thin flatbread topped with crème fraîche, smoked bacon and thinly sliced onions. It is a specialty from the Alsace region of France and the bordering regions of Germany. The dough is easy to prepare and an ideal recipe for days when things have to be quick.

Ingredients you will need for this recipe:
  • all-purpose flour | 200 g
  • salt | 1 Tsp
  • oil | 1 Tbsp
  • water | 110 ml
  • sour cream | 50 g 
  • crème fraîche | 50 g
  • salt & pepper 
  • onions | 1 – 2
  • bacon – cubed | 100 g 
  • spring onions | 2

How to make Tarte Flambée | Flammkuchen:

(1) For the dough

Combine 200 g all-purpose flour, 1 tsp salt, 1 tbsp oil and 110 ml water by hand or in a stand-mixer to form a smooth dough. Form the dough into a ball and wrap in cling film and leave to rest while you prepare the remaining ingredients.

(2) For the toppings

For the toppings, season 50 g sour cream and 50 g crème fraîche with salt and pepper and mix, until well combined. Cut the onions and spring onions into thin slices, and cut the smoked bacon into small cubes/strips. 

(3) Preparation

Preheat the oven to as hot as possible – my oven managed 275 °C. Remove the dough from the cling film and divide into two equal pieces. Roll out the dough as thinly as possible and place on a baking tray lined with baking paper. Spread the mixture of sour cream and crème fraîche on the rolled out dough and top with bacon, onions and spring onions.

Bake in the oven, until the edges of the dough begin to darken. Depending on your oven temperature, it should take about 5 – 8 min. Serve right away. Enjoy!

Some Recipe Tips:

Federweißer: In Germany, it is very popular to enjoy a glass of chilled Federweißer (young wine) with Tarte Flambée | Flammkuchen. Depending on when the grape harvest begins, fresh Federweißer is available from the beginning of September to the end of October.

Alternative Toppings: You can also enjoy the Tarte Flambée | Flammkuchen with a variety of different toppings, such as spinach, onions, and goat cheese. Just make sure, that the toppings will be cooked within the short baking time of the dough (5 – 8 min).
