- 100 g butter
- 300 g risotto rice
- 100 ml white wine
- 800 ml vegetable broth
- salt & pepper
- some Parmesan Cheese
- 1 radicchio
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
How to make White Wine Risotto with Radicchio:
(1) Preparing the Ingredients
Peel and finely dice 2 onions. Measure and prepare the remaining ingredients to streamline the later cooking process.
(2) For the White Wine Risotto
In a pot, heat up 800 ml vegetable broth and keep warm.
In a large pot, melt half of the butter. Add the diced onions and sauté until translucent. Add the risotto rice and stir, until it becomes slightly translucent. Pour in the white wine and stir until the wine is almost completely evaporated.
Gradually add the warm vegetable broth, one ladle at a time, stirring constantly. Continue until the rice is al dente and reaches the desired creamy consistency. When the desired consistency is achieved, stir in the remaining butter and some Parmesan. Season with salt and pepper to taste.
(3) Concurrently Prepare the Radicchio
While the risotto is cooking, heat up olive oil in a pan. Quarter the radicchio and sauté on both sides until it wilts slightly. Deglaze with balsamic vinegar and set aside.
(4) Plating and Serving the Risotto
