Ingredients:
  • 160 g black olives
  • 160 g green olives
  • 4 cloves of garlic
  • 1 handful fresh parsley
  • 100 ml high-quality olive oil
  • 1 splash lemon juice
  • salt and pepper

Directions:

(1) Prepare the Ingredients:

Peel and finely chop the garlic cloves. Wash and dry the parsley, then finely chop it. If using jarred olives, drain them well and pat them dry with a paper towel.

(2) Combine the Ingredients:

In a mixing bowl, combine the black olives and green olives. Add the finely chopped garlic and parsley to the bowl. Add the olive oil and lemon juice, then season with salt and black pepper to taste.

Mix well to ensure the olives are evenly coated with the oil, garlic, and parsley.

(3) Marinate & Chill:

Transfer the marinated olives to an airtight container.

Let them marinate in the refrigerator for at least 2 hours, or ideally overnight, to allow the flavors to meld.

(4) Serve:

Serve the marinated olives as an appetizer, side dish, or part of a Mediterranean platter.
