Truffle Pasta | Tagliatelle al Tartufo
- Holidays & Seasonal, Italy, Main Dishes, Pasta
Tagliatelle al Tartufo is a perfect blend of simplicity and indulgence. This elegant dish is surprisingly easy to prepare, with tagliatelle coated in a creamy truffle sauce and enriched by the nutty richness of Parmesan. Ideal for special occasions, romantic dinners, or simply treating yourself, it promises to captivate your taste buds with its aromatic depth and silky texture—whether you’re a truffle enthusiast or trying it for the first time.
Ingredients:
- 500 g tagliatelle
- 40 g truffle paste
- 250 g cooking cream
- about 100 g freshly grated Parmesan
- salt and pepper
Directions:
1. Cook the Pasta: Cook the tagliatelle according to the package instructions until al dente. Reserve some pasta water before draining.
2. Prepare the Sauce: While the pasta cooks, bring the cooking cream to a gentle boil in a large pan. Stir in the truffle paste and simmer until well combined. Add the grated Parmesan and let the sauce gently simmer, stirring occasionally. Season with salt and pepper to taste.
If the sauce thickens too much, add a splash of the reserved pasta water to loosen it.
3. Combine Pasta and Sauce: Add the cooked tagliatelle to the pan with the sauce. Toss until the pasta is evenly coated.
If the sauce appears too dry or thick, add more pasta water to reach the desired creamy consistency.
4. Serve: Plate the pasta and serve immediately. Garnish with extra Parmesan or freshly shaved truffle, if desired.
Some Recipe Tips:
Add Extra Flavor: For extra flavor, top with a drizzle of truffle oil or fresh truffle shavings.
Choose Quality Ingredients: Use high-quality truffle paste for the best taste.
Perfect Pairing: Serve with a crisp white wine like Chardonnay or Sauvignon Blanc.
