Ingredients:
  • 500 g tagliatelle
  • 40 g truffle paste
  • 250 g cooking cream
  • about 100 g freshly grated Parmesan
  • salt and pepper

Directions:

1. Cook the Pasta: Cook the tagliatelle according to the package instructions until al dente. Reserve some pasta water before draining.

2. Prepare the Sauce: While the pasta cooks, bring the cooking cream to a gentle boil in a large pan. Stir in the truffle paste and simmer until well combined. Add the grated Parmesan and let the sauce gently simmer, stirring occasionally. Season with salt and pepper to taste.

If the sauce thickens too much, add a splash of the reserved pasta water to loosen it.

3. Combine Pasta and Sauce: Add the cooked tagliatelle to the pan with the sauce. Toss until the pasta is evenly coated.

If the sauce appears too dry or thick, add more pasta water to reach the desired creamy consistency.

4. Serve: Plate the pasta and serve immediately. Garnish with extra Parmesan or freshly shaved truffle, if desired.
