Ingredients you will need for this recipe:
- black olives
- fresh parsley
- garlic
- olive oil
- lemon
- salt & pepper
- puff pastry
How to make Mediterranean Black Olive Spread:
(1) Make the Black Olive Spread
In a food processor, add 160 g black olives, a handful of fresh parsley, 1-2 garlic cloves, 3 tablespoons olive oil and 1-2 tablespoons of fresh lemon juice.
Pulse until everything is well minced and combined, scraping the sides as needed.
Season with salt & pepper to your liking.
(2) Puff pastry
Cut the puff pastry into squares and press into a lightly greased mini muffin tin.
Bake at 200 °C for 10-15 min or according to your puff pastry package instructions.
(3) Serve
Let the puff pastry cool down for about 5 minutes. Dress them up with a teaspoon of Black Olive Spread, sprinkle with some freshly chopped parsley on top and serve.
