Bourbon Vanilla Delights – A Festive Cookie for the Holiday Season

Ingredients:
  • 500 g all-purpose flour
  • 200 g ground almonds
  • 200 g granulated sugar
  • 1 pinch of salt
  • 2 tablespoons vanilla sugar
  • 400 g butter
  • 50 g granulated sugar + 2 heaping teaspoons bourbon vanilla sugar
  • chocolate decorations (optional)

Directions:

1. Prepare the dough: Mix flour, ground almonds, sugar, salt, and vanilla sugar. Add butter in cubes and combine with hands or a kitchen machine until a dough forms. Divide the dough into two balls, wrap in plastic, and refrigerate for at least 30 minutes.

2. Form and bake the cookies: Preheat oven to 180°C (350°F), top and bottom heat. Roll dough into 2 cm (1-inch) balls and place on parchment-lined baking sheet. Bake for 15-20 minutes until golden at the edges. Let the cookies cool for a minute.

3. Coat and decorate: Mix 50 g sugar and 2 heaped teaspoons bourbon vanilla sugar in a bowl. While still hot, roll cookies in the sugar mixture to coat. Once completely cooled, decorate with chocolate decorations, if desired.

Chill the dough: Chilling the dough before baking helps the cookies hold their shape during baking and prevents them from spreading too much. If you’re short on time, you can chill the dough for as little as 30 minutes, but longer (up to 1 hour) can yield even better results.

Storage: Once baked, store the cookies in an airtight container or cookie jar to keep them fresh. They will stay delicious for at least 4 weeks.
