This Blackberry & Thyme Champagne Cocktail is perfectly balanced with flavors of blackberry and thyme. The beautiful ombré coloring makes this champagne cocktail perfect for special occasions like Birthdays, Brunches or New Year’s Eve.

Ingredients you will need for this recipe:
- blackberries
- sugar
- water
- Champagne
- sprig of thyme
How to make Blackberry Thyme Champagne Cocktail:
(1) Blackberry Simple Syrup
In a small saucepan, bring the 100 g blackberries, 100 g sugar and 100 ml water to boil, stir to help the sugar dissolve. Once it comes to a boil, lower the heat to medium low and let it simmer for 10 minutes. Strain the blackberries with a fine-mesh strainer and let the syrup cool.
(2) Blackberry Thyme Champagne Cocktail
Add 1 tablespoon of blackberry simple syrup to the bottom of a champagne flute and top with champagne. Roll the sprig of thyme in your hand to release the aromas, add to the glass and garnish with some fresh blackberries.
