Its signature flavor comes from the combination of mayonnaise, curry powder, and finely chopped onions.

Although Joppie Sauce itself is a modern creation, its distinctive curry flavor reflects a broader culinary influence. Through historical trade connections and ties to Indonesia, spices became an integral part of Dutch cuisine — shaping flavors that are still present in popular sauces today.

Ingredients:

  • 200 g mayonnaise
  • 1 small onion
  • 3–4 tsp curry powder
  • 2 tsp mustard
  • 2 tsp sugar
  • a small amount of tomato paste
  • a splash of light vinegar
  • salt & pepper

Directions:

1. Prepare the onion: Finely dice the onion. Sauté in a pan over medium heat with a little oil until translucent, then let it cool completely.

2. Mix the sauce: In a bowl, combine mayonnaise, curry powder, mustard, sugar, tomato paste, and vinegar. Add the cooled onions and mix well. Season with salt, pepper, and adjust sweetness if needed.

3. Let it rest: Refrigerate for at least 2 hours to allow the flavors to fully develop.
